Ted Lasso's Biscuit Recipe (Plus a Free Box to Put Them In)
Happy Ted Lasso Day! Today's a big day for anyone who's curious.... Season 4 of Ted Lasso drops today, and around here, that's basically a public holiday.
"Believe." One word, one sign, and somehow it's still stuck to half of Australia's fridges. Half of head office has a favourite line, most of us quote the show at least a few times a week without meaning to, and all of us agree on one thing: nothing says "welcome back, coach" quite like a batch of warm, buttery biscuits waiting on the bench.
So to mark the occasion, we're sharing our version of the biscuits that won Ted so many hearts (and a very confused Rebecca). Plus, a free printable box to pop them in, because a biscuit gifted in a proper box just hits different.
Recipe first, box second. Let's get baking.
The Recipe: Ted Lasso-Inspired Shortbread Biscuits
These are simple, old-school shortbread — the kind that comes together with pantry basics and a bit of patience while they chill. No fancy technique required, just the good stuff: butter, sugar, flour, and a little bit of love (we won't tell if you lick the spoon).
Prep time: 15 minutes
Chill time: 30 minutes
Bake time: 45–60 minutes
Makes: approx. 16 squares
Ingredients
- 2 cups all-purpose flour
- ¼ tsp coarse salt
- 1 cup (2 sticks) unsalted butter, room temperature
- ¾ cup icing sugar
Method
- Preheat your oven to 150°C (300°F).
- Sift the flour and salt together in a bowl and set aside.
- Beat the butter on high speed until light and fluffy, about 3–5 minutes.
- Gradually add the icing sugar, continuing to beat until pale and fluffy.
- Add the flour and salt mixture to the butter and sugar, and mix until just combined.
- Butter a square baking pan.
- Press and roll the shortbread dough into the pan, no more than 1.5cm (½ inch) thick.
- Refrigerate for at least 30 minutes.
- Cut into squares.
- Bake until golden, making sure the middle is firm, approximately 45–60 minutes.
- Cool completely, then enjoy. Ideally with a cup of tea and a pep talk.
Matchbox tip: A good non-stick square pan makes all the difference here (and clean-up's a breeze). Whatever pan you reach for, remember: hand-wash your non-stick bakeware, don't toss it in the dishwasher, it'll thank you for years to come.
