Viral Dot Cake

By now you’ve almost certainly seen them on your feed — tiny cakes sitting in ramekins, coated in a perfect layer of hundreds & thousands. They’re called dot cakes, they’re having an absolute moment on TikTok, and we’ll be honest: we feel a little smug about this one.
Matchbox has stocked the tools to make them — the baking trays, the ramekins, and the spatulas — for the better part of five decades. We didn’t invent the dot cake. But we absolutely could have. And since we’re currently celebrating our 50th birthday, it felt only right to lean in.
Ingredients
For the cake:
- 125g unsalted butter, softened
- 125g caster sugar
- 2 large eggs, room temperature
- 125g self-raising flour, sifted
- 1 tsp vanilla bean paste
- 2 tbsp milk
- Pinch fine salt
To finish:
- 200g white chocolate, chopped
- 1 tsp coconut oil
- 1 ½ cups hundreds & thousands
- 3 tbsp strawberry jam, warmed (optional)
Method
Preheat oven to 180°C. Grease 4 x 9cm ramekins well and place on a tray.
Beat butter and sugar for 2-3 mins until pale and fluffy. Beat in eggs one at a time, then vanilla. Fold in flour and salt, then milk until just smooth.
Divide batter evenly between the ramekins. Bake 15-20 mins until golden, risen and springy to touch. Cool for 5 mins, then turn out onto a rack to cool completely.
If you want the jam filling do this step, otherwise move straight to step 5 - Slice cakes in half horizontally. Spread a thin layer of jam, sandwich together. Chill 15 mins to firm up.
Melt chocolate with oil until smooth. Spoon over top and sides, let excess drip. Immediately roll or sprinkle generously with hundreds & thousands. Set for 10 mins and then enjoy!
