Easy Air Fryer Okonomiyaki

Prep time: 10 mins | Cook time: 24 mins | Makes: 12 serves

Ingredients

  • 150g (1 cup) plain flour
  • 4 eggs
  • 2 tbsp soy sauce
  • 60ml (¼ cup) dashi stock or vegetable stock
  • 3 cups shredded wombok (Chinese cabbage) or green cabbage
  • 1 carrot, peeled & coarsely grated
  • Canola oil spray

To Serve:

  • Tonkatsu sauce
  • Kewpie mayonnaise
  • Pickled ginger
  • Sliced green shallot
  • Toasted sesame seeds

Method

  1. Whisk together flour, eggs, soy sauce and dashi stock in a large bowl. Add the cabbage and carrot and mix to combine. Season with salt & pepper to your liking

  2. Place 4 egg rings in an air-fryer basket. Spray with oil. Fill each ring with approximately 80ml (⅓ cup) cabbage mixture and air fry at 180C for 8 minutes. Transfer to a plate. Keep warm. Repeat with remaining cabbage mixture, spraying the air fryer with oil each time.

  3. Drizzle pancakes with tonkatsu sauce and mayonnaise. Use a skewer to create a pattern. Top with pickled ginger, sliced spring onions and sesame seeds as desired.
