Lemony Salmon & Asparagus Tray Bake for Two

When the weather warms up, lunch should feel light, fresh and easy. This lemony salmon tray bake ticks every box. Everything roasts together on one tray, it's ready in about 25 minutes, and it's packed with spring's favourite green: asparagus.

It's just the right size for two, which makes it perfect for a relaxed weekend lunch or a working-from-home treat.

Made for smaller meals

Ingredients

Serves 2 | Prep 10 mins | Cook 20 mins

  • 2 salmon fillets (about 150–180g each), skin on
  • 1 bunch asparagus, woody ends trimmed
  • 200g cherry tomatoes
  • 1 lemon (half thinly sliced, half juiced)
  • 1 garlic clove, thinly sliced
  • 1 tbsp capers, drained
  • 2 tbsp olive oil
  • Salt and pepper

Herby yoghurt

  • 1/2 cup Greek yoghurt
  • 1 tbsp chopped dill
  • 1 tbsp chopped flat-leaf parsley
  • 1 tsp lemon juice
  • Pinch of salt

To serve: crusty bread, or cooked quinoa or couscous

Method

  1. Preheat your oven to 200°C (180°C fan-forced).
  2. Add the asparagus, cherry tomatoes, garlic and lemon slices to your roasting tray. Drizzle with half the olive oil, season with salt and pepper and toss to coat. Roast for 8 minutes.
  3. Meanwhile, pat the salmon dry with paper towel, rub with the remaining olive oil and season well.
  4. Take the tray out of the oven and nestle the salmon in among the vegetables, skin-side down. Scatter over the capers and return to the oven for 10–12 minutes, until the salmon flakes easily but is still slightly pink in the centre.
  5. While the salmon cooks, stir together all the herby yoghurt ingredients.
  6. Squeeze the lemon juice over the tray and serve straight away with the herby yoghurt and your choice of crusty bread or grains.

Our tips

  • Cooking for more? Double the recipe and use the Elektra Medium Roasting Tray.
  • Swap it up. Ocean trout or firm white fish work just as well. Add a handful of broad beans or zucchini for extra greens.
  • Easy clean-up. Soak your tray in warm, soapy water for a few minutes and any roasted-on bits will lift away easily.
