• 4 calamari tubes calamari cleaned medium
  • 3/4 cup couscous
  • 200 g chorizo sausage finely chopped
  • 180 g haloumi grated
  • 50 g baby spinach shredded
  • 1 lemon finely grated juiced zested
  • 1 lemon cut into wedges *to serve
  • 1/2 cup light sour cream
  • 1/2 cup roasted capsicum dip

Calamari Stuffed with Chorizo and Haloumi

Method

  1. Add couscous to ½ cup of boiling water in a heatproof bowl.
  2. Allow to stand 15 minutes until liquid is absorbed, use a fork to fluff couscous.
  3. Fry chorizo for 3-4 minutes in a fry-pan until browned.
  4. Add couscous, Haloumi, chorizo, spinach, lemon juice and zest and stir to combine.
  5. Fill each calamari tube with couscous mixture.
  6. Cook on preheated barbeque or pan fry for 3-4 minutes each side until cooked.
  7. Combine capsicum dip and sour cream.
  8. Slice stuffed calamari and serve with dipping sauce and lemon wedges.
