Calamari Stuffed with Chorizo and Haloumi

- 4 calamari tubes calamari cleaned medium
- 3/4 cup couscous
- 200 g chorizo sausage finely chopped
- 180 g haloumi grated
- 50 g baby spinach shredded
- 1 lemon finely grated juiced zested
- 1 lemon cut into wedges *to serve
- 1/2 cup light sour cream
- 1/2 cup roasted capsicum dip
Impress your guests with a delicious and easy-to-make calamari dish that can be grilled, baked, or pan-fried to perfection. This recipe is sure to leave a lasting impression and will have everyone asking for seconds.
Method
- Add couscous to ½ cup of boiling water in a heatproof bowl.
- Allow to stand 15 minutes until liquid is absorbed, use a fork to fluff couscous.
- Fry chorizo for 3-4 minutes in a fry-pan until browned.
- Add couscous, Haloumi, chorizo, spinach, lemon juice and zest and stir to combine.
- Fill each calamari tube with couscous mixture.
- Cook on preheated barbeque or pan fry for 3-4 minutes each side until cooked.
- Combine capsicum dip and sour cream.
- Slice stuffed calamari and serve with dipping sauce and lemon wedges.
