Method
In a microwave safe bowl, put in chocolate chips and coconut oil. Mix well until smooth and cook on high for one minute. Let sit for another minute, then stir. Place chocolate back in for 15 second bursts until chocolate is melted and silky. Avoid over-heating as chocolates may solidify! Let the heat in the bowl do the final melting while you stir away.
Line a baking sheet with parchment paper. Take your apricots and dip each one half-way into the melted chocolate. Arrange the apricots on the parchment paper.
Place the tray in the refrigerator to let the chocolate harden. You can store the dipped apricots in the fridge or at room temperature.
