Ingredients

  • 130g punnet of fresh raspberries, plus extra, to serve
  • 1/2 cup of caster sugar
  • 350g of fresh strawberries, hulled
  • 4 cups of ice cubes
  • 1 cup of Baileys Irish Cream liqueur
  • 1/2 cup of strawberry liqueur
  • 30 mini marshmallows
  • 10 mini meringues
  • Mint leaves, to garnish

When you think of Eton Mess you probably think of gooey meringue and fresh Summery fruits like raspberries and strawberries, and we don't blame you because that's exactly what an Eton Mess is. 

But, if you're looking to add something a little extra to your dessert, why not include a little bit of Baileys and strawberry liqueur and BAM, you've got yourself an Eton Mess cocktail.

Method

  1. Place the raspberries, sugar and 125ml (1/2 cup) of water into a small saucepan before bringing it to the boil. Boil for 5minutes or until the mixture has reduced and thickened and take it off the heat. Use a blender or a hand-held food processor to blend the mixture until it's nice and smooth. Place it in the fridge for 30 minutees or until chilled. 

  2. Once that's done, place eight tall glasses into the freezer to chill. 

  3. Drizzle about 60ml (1/4 cup) of raspberry puree mixture down the inside of the chilled glasses, making sure to swirl the mixture around to coat the glasss. Then, return them to the freezer. 

  4. Finely chop 4 strawberries and set them aside before halving the remaining strawberries. Place the halved strawberries, ice, Baileys and strawberry liqueur and remaining raspberry puree into a blender and blend the mixture together until it's fully combined and slushy. 

  5. Pour the strawberry mixture into the chilled glasses and top it with the marshmallows, meringues, chopped strawberries and mint leaves. Place the extra raspberries onto cocktail skewers and use them as swizzle sticks. Enjoy!

What alcohol should every at-home bar have?

The answer can be subjective as it's entirely down to your preferences and what alcohol you like drinking more but for an all-rounded selection, we'd recommend having vodka, gin, whiskey (bourbon, rye or scotch), rum, tequila, bitters and a flavoured liqueur of your choice (in the case of this recipe, choose strawberry)! 

What classifies healthy drinking?

Taken from extensive research, moderate alcohol consumption for healthy adults generally means up to one drink a day for women  and up to two drinks a day for men. 

Is Bailey's good on its own?

You can definitely drink Bailey's by itself due to how smooth it is, however you can always mix it with coffee or butterscotch for something a little different.
