Ingredients
- Approx. 8 medium apples
- 1 medium orange
- 3 cinnamon sticks
- 1 whole nutmeg (optional)
- 2 tsp whole cloves
- 170g honey, plus more to taste
- 10-11 cups of water (roughly 2.3L)
Method
Core your apples and roughly chop them into small chunks. Place apple chunks into a large cooking pot.
Take your orange and slice into rings. Add orange rings into the pot – again, you don't need to peel off the orange skin.
Add spices into the pot: 3-4 cinnamon sticks, 1 whole nutmeg, 2 tsp whole cloves. Drizzle over the top with honey.
Pour in 11 cups of water to cover all your ingredients. Bring water to a boil over high heat. Once it reaches boil, reduce heat back to medium and lightly boil (uncovered) for 1 hour. Cover, reduce heat to medium/low, and simmer for another 2 hours. When finished, it should turn amber in colour.
The taste should be sweet and spicy – you can always add more honey or hot water to achieve desired taste.
Once finished, strain the cider through a fine mesh colander or cheese cloth placed over a regular colander. Squeeze as much juice out as you can! Then, discard any fruit pulps or seeds. Serve the cider hot.
