Munch On This Italian Focaccia

Ingredients
- 1/2 x 1 kg pkt of Lighthouse premium bread mix - crusty ancient grains
- 315ml of warm water
- 1/3 cup of Coles brand basil pesto
- 1 chorizo, sliced
- 300g of Coles Italian-style antipasto mix
- 220g tub of Coles brand bocconcini, drained & torn
- 1 tablespoon of rosemary leaves
- Mixed salad leaves, to serve

Method
Preheat the oven to 200°C before preparing the bread mixture with water, following the packet directions. Knead the mixture for 2 minutes or until the dough is smooth and elastic.
Press the dough into a rectangle and placed it on a pre-prepared greased tray. Then, press your fingers into the dough firmly enough to made deep indents. Bake this in the oven for 10 minutes.
Once the 10 minutes is up, remove from the oven and spoon the pesto over the top before sprinkling with chorizo and vegetables. Bake this for a further 15-20 minutes or until the base is nice and crispy. Top the focaccia with the bocconcini and rosemary. Serve with a salad or alongside a bigger meal.
