Pretty Amazing (& Healthy) Banana Pancakes

Ingredients
- 1 small, ripe banana
- 1 egg
- 2 tablespoons of wholemeal spelt flour
- 1 tablespoon of olive oil
- 2 tablespoons of natural/greek yoghurt
- Handful of fresh berries
- 100% maple syrup, to serve

Super quick and simple, our banana pancakes are ready to eat in 15 minutes or less. This recipe serves 1, so you can make it for yourself before rushing out the door for work, or multiply the recipe to feed the whole family on the weekend.

Method
In a medium bowl, mash the banana until there are no big lumps.
In a separate, small bowl, lightly whisk the egg. Add it to the banana and whisk well.
Next, add the flour and whisk until well-combined.
Heat the oil on a non-stick frying pan over medium heat, then pour 1/4 cup of the mixture into the pan.
Cook for 1 minute or until bubbles appear on the surface. Flip and cook for another minute or until the underside of the pancake is golden. Repeat to make 2 more pancakes.
Transfer to a plate to serve. Top with yoghurt, berries and a drizzle of maple syrup. Enjoy!
FAQs
What is spelt flour?
Spelt is an ancient grain similar to wheat, however it has a lower gluten content. This recipe calls for wholemeal spelt flour, however for an even lighter pancake you can use white spelt flour. If you're not a spelt person (it's super yummy, give it a try!), normal plain white flour will do the trick.
