Baked Ham Recipe with Honey Glaze

Method
Let ham sit covered at room temperature for 2 hours before roasting. Then remove the wrap or packaging.
While ham is coming to room termperature, make the honey glaze sauce. In a small saucepan, combine apricot preserves, honey, brown sugar, dijon, and butter over medium heat. Bring to a simmer and cook for 1 minute, whisking constantly. Then remove from heat. It should reach the consistency of loose honey.
Preheat oven to 160ºC with the oven rack in the lower third of the oven.
Line a roasting dish with foil. Place ham in the roasting pan (cut-side down) and brush on 1/3 of the honey glaze sauce. Cover tightly with foil.
Bake at 160ºC for 21-23 minutes per kilogram (about 2 hours for a 5.2kg ham). As the ham is already cooked, it should be heated to about 40ºC during this stage. You can check the temperature with an oven-safe meat thermometer.
Increase oven temperature to 215ºC. Remove ham from the oven and carefully unwrap the foil. Brush with 1/3 more of the glaze. Place back in the oven and bake uncovered for 10 minutes.
After 10 minutes, remove again from the oven and brush with the remaining 1/3 glaze. Roast uncovered for another 10 minutes until a golden/brown crust is formed and the internal meat temperature reaches 55ºC.
Transfer ham to a serving dish and let ham rest for 15-20 minutes before serving. You can strain the ham's juices from the roasting dish through a sieve, skim off the fat, and spoon juices over the ham slices when serving.
FAQs
Can I use boneless ham?
Bone-in ham offers better flavour and texture for bigger roasts. Boneless meats can be spongy as they are reshaped after the bone is removed.
How much baked ham should I make?
It depends on how many people you are serving. If the ham is the primary mains, you can aim for 300g of meat per person. Our 5kg ham in this recipe can serve 15-20 people.
