Fresh Strawberry Pie with Homemade Jam

Ingredients
Homemade Jam (makes 450g):
- 6 cups fresh berries (strawberries, blackberries, blueberries, or other berries you'd like)
- 2 1/2 cups of sugar
- 2 tbsp freshly squeezed lemon juice
- Pinch of salt
Pie pastry tart:
- 330g all purpose flour
- 200g cold unsalted butter
- 115g white sugar
- 1 egg and 1 egg yolk
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
Strawberry Pie Filling:
- 200g fresh strawberries
- 200-250g homemade jam
- Sprinkle of cinnamon and/or brown sugar

How to make homemade jam with berries

Cut your berries into small, even pieces. Add the sugar, salt, and lemon juice to the berries and mash them all together (a wire masher helps!) until combined.

In a small saucepan, boil the fruit for 20 minutes over medium heat, stirring occasionally. This time will vary as the water content in fruits vary as well, but after 20 minutes of steady boil, you can start checking the jam's consistency. As your jam starts to cool, the bubbles will grow smaller and tighter.

Once the jam reaches your desired consistency, remove it from the heat and transfer to a compact glass Kilner jar! Cover and allow to cool completely before storing in the fridge.
How to bake strawberry pie

Preheat oven to 180C. Meanwhile, combine dry ingredients – flour, sugar, salt, and baking powder – in a mixing bowl.

Add cold butter, egg and egg yolk, and mix quickly using your hands or a food processor. Do not over-work the dough too much as it may crumble apart. The result should be a smooth ball of dough.

Divide the dough into two - transfer the first half onto a 24/26cm tart pan and spread gently and evenly into the base and insides of the pan. The other half of the dough will be used for covering.

Wash the fresh strawberries and cut each into half slices. Fill the base of the pastry dough with the strawberry slices and homemade jam, as desired. Take the rest of the dough and use it to decorate over the top of the pie. Finally, brush with egg wash and sprinkle a pinch of sugar on top.

Bake for 20 minutes in a fan oven or 30 minutes in a conventional oven. Check regularly. Once done, bring it out of the oven and sprinkle some cinnamon or white sugar as desired. Serve warm or with a scoop of vanilla ice cream and voila!

Can I save my homemade jam for longer?
