Ingredients

  • 1 tbs of olive oil
  • 1 large brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 head of cauliflower, cut into florets
  • 500g of potatoes, peeled & chopped
  • 1 litre of chicken liquid stock
  • 1/2 cup of pure cream

Stuck inside on cold, rainy days? Sounds like it's a good time to enjoy some homemade, warm, hearty meals again! 

This creamy cauliflower soup is no exception. Super quick and easy to make, this soup will fill both the hearts and bellies of you and the family, and will more than likely become a staple for weeknight dinners.

Method

  1. Heat the oil in a large saucepan over medium-high heat and then add the onion and garlic. Cook the mixture, stirring, for about 3 minutes until the onion has softened and the garlic becomes fragrant. Add the cauliflower and potato, and cook this, constantly stirring, for roughly 5 minutes. 

  2. Once the mixture has finished cooking, add the chicken stock and season it with pepper. Cover this and bring it to the boil before reducing the heat to medium-low. Simmer the mixture for 15 to 20  minutes or until the potato is nice and tender. Once done, set it aside for 5 minutes so that it can cool slightly. 

  3. Blend the mixture, in batches so you can get the mixture smooth and creamy. Return the mixture to the pan over low heat, adding the cream and cooking it for 2 minutes or until it's heated through. Serve it and enjoy!

FAQs

What can I add if I want my cauliflower soup to have more flavour?

There are a number of things you can add, for example, various herbs including thyme, oregano and bay leaves, or you can add some more ingredients like shallots, hazelnuts or even cashews. You can pretty much add whatever takes your fancy! 

Can I make my cauliflower soup thicker?

If you want your soup to be a thicker consistency, try adding either flour or cornstarch to your mixture. Simply mix a few tablespoons into a seperate bowl with a little bit of broth in it so you can be sure it doesn't clump and won't ruin the flavour before adding to the rest of your mixture. 

How long does cauliflower soup last in the fridge?

Cauliflower can last up to 4 days if refridgerated properly but we think it always tastes better right after you've cooked it! If you do have leftovers, make sure to keep them in an airtight container.
