Savoury Scones for High Tea

- 450g self-raising flour
- 150g butter
- 2 free-range eggs
- 4 tbsp milk
- 1/2 tsp mustard powder
- 1/2 tsp ground cumin
- 50g grated cheddar

Method
Preheat the oven to 200ºC. Meanwhile, pulse the flour and butter in a food processor until they look like breadcrumbs. Pour into a bowl and make a hole/well in the middle.
In a different bowl, beat the eggs and milk using a fork. Add a pinch of salt & pepper into the mixture, and pour into the well. Mix the flour into eggs and milk, adding more milk if needed, until you have a soft, dry dough.
Split the dough evenly into 3 sections. Press each section out flat on your tabletop and sprinkle 1 section with mustard powder, 1 with cumin powder, and 1 with grated cheese. Roll the ingredients into the dough and knead lightly until mixed in. Try not to handle the mixture too much.
Press or roll the dough sections flat again, until they are about 2.5cm thick. Cut out 2 circles from each section with a cutter (approx 8 cm) or the rim of a glass, and place upside down on a baking sheet. Brush the top of each circle with extra milk. Bake in the oven for 15 minutes, until risen and brown. Enjoy!
