Ingredients

  • 2 large eggs
  • 2 tsp of vanilla extract
  • 175g of fruit , stoned and diced
  • 140g of granulated sugar
  • 1-2 of tbsp citrus juice - lemon, lime or orange
  • 175g of very soft butter, plus extra for greasing
  • 175g of caster sugar
  • 250g of self raising flour

We have to admit, baking is pretty fun in Winter but do you know what's even more fun? Yep, you guessed it! Baking in Summer! 

Full of fresh and healthy Summer fruits, this vanilla cake might seem a bit plain at first glace but we promise you won't be saying that after you've had a piece (because you'll want to go back for seconds immediately)! 

Guaranteed to be a hit with the whole family, make this cake again and again for a quick and easy Summer dessert! 

Method

  1. Heat the oven to 180C and grease a square cake pan before lining the base and both ends with a long strip of baking paper. Place the butter, caster sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes or until the mixture is pale, creamy and thick. 

  2. Spread one-third of the cake mix into the pan. Once done, spread 50g of the fruit over the mixture. Continue adding a third of the cake mixture with a handful of the berries until there's no mixture left. Once you've filled up the pan, gently spread the mixture so it's even with the back of a spoon. Pop the cake pan in the oven for 1 hour or until an inserted skewer comes out clean. 

  3. Put the remaining 75g of fruit into a bowl with the granulated sugar. Stir in 1 tablespoon of the citrus juice, first with a fork and mashing a little bit of the fruit as you go. If it's looking a bit dry, you can always add a little more juice to the mixture. Spoon the mixture over the cake, leaving the cake inside the pan until it's cool and the topping is set and crisp. Serve and enjoy!

How long will fresh fruit last on a cake?

Generally the fruit on top of your cake will last 1-2 days with refrigeration so try to eat it between then! 

Is it better to bake my cake a day before I need it?

If you're not icing your vanilla cake then it's perfectly fine to bake it a day beforehand. This allows your cake to cool completely if you keep it at room temperature. Cover your cake tightly to keep it fresher for longer. 

What kind of fruit goes well with vanilla cake?

Vanilla is considered a tropical spice so the best fruits to pair with a vanilla flavour is tropical fruits. Some of these fruits are mango, pineapple, coconut, raspberries or strawberries.
